Shoe Peg Corn Salad
Ingredients
- 2 cans Shoe Peg corn drained
- 1 large tomato
- 1 small bottle Italian dressing
- diced bell pepper to taste optional
- chopped green onions to taste optional
- whole kernel yellow corn to taste optional
Directions
- Place corn in a 1 12-quart glass jar
- Remove seed portions of tomato dice and add to corn
- Cover with Italian dressing and marinate 12 to 24 hours in refrigerator turning jar occasionally to be sure all vegetables are covered
- Drain before serving Diced bell pepper andor chopped green onions may be added for color andor flavor
- Whole kernel yellow corn may also be added for color
