Shoepeg Corn Casserole

Ingredients

  • 12 c chopped onion
  • 12 c chopped celery
  • 14 c chopped bell pepper
  • 1 can Shoepeg corn drained
  • 1 stick oleo
  • 12 c sharp grated cheese
  • 1 can cream of celery soup
  • 1 can French-cut green beans
  • 1 8 oz cream cheese
  • 1 stack crushed Ritz crackers

Directions

  1. In 3 tablespoons butter saute the onion celery and bell pepper
  2. Mix corn cheese beans celery soup and cream cheese Place in a 9 x 13-inch casserole dish
  3. Melt the oleo and mix with the cracker crumbs
  4. Pat crackers on top of casserole
  5. Bake at 350 for 45 minutes
