Shredded Beets With Horseradish And Sour Cream

Ingredients

  • 23 c chopped onion
  • 14 c butter or margarine
  • 2 1 lb each cans julienne beets drained very dry
  • 12 tsp salt
  • 14 tsp dill weed
  • pinch of pepper
  • 12 c sour cream at room temperature
  • 2 Tbsp bottled horseradish

Directions

  1. Brown onion lightly in butter in large saucepan 2 to 3 minutes
  2. Mix in beets horseradish salt dill weed and pepper Cover lower heat and cook 2 to 3 minutes
  3. Smooth in sour cream and bring just to serving temperature do not boil
