Shredded Potato Pancakes
Ingredients
- 4 large potatoes shredded and peeled
- 2 eggs
- 1 small onion grated
- 13 c flour
- 1 tsp salt
- vegetable oil for frying
Directions
- Spread shredded potatoes on a towel and squeeze dry
- Place in a large bowl stir in eggs onions flour and salt
- In a large skillet heat oil over medium heat
- Drop potato mixture by scant 12 cup into skillet
- Flatten each to about 4-inches round
- Cook until golden brown about 4 minutes
- Turn and cook other side Remove to paper towel to drain
- Serves 4
