Shredded Potato Pancakes

Ingredients

  • 4 large potatoes shredded and peeled
  • 2 eggs
  • 1 small onion grated
  • 13 c flour
  • 1 tsp salt
  • vegetable oil for frying

Directions

  1. Spread shredded potatoes on a towel and squeeze dry
  2. Place in a large bowl stir in eggs onions flour and salt
  3. In a large skillet heat oil over medium heat
  4. Drop potato mixture by scant 12 cup into skillet
  5. Flatten each to about 4-inches round
  6. Cook until golden brown about 4 minutes
  7. Turn and cook other side Remove to paper towel to drain
  8. Serves 4
