Shrimp-Mushroom Casserole

Ingredients

  • 3 Tbsp butter
  • 3 Tbsp flour
  • 2 c milk or cream
  • 12 c dry sherry
  • 1 lb cooked cleaned shrimp
  • 1 c sliced mushrooms
  • 1 c blanched slivered almonds
  • grated Parmesan cheese
  • cracker crumbs

Directions

  1. Melt butter
  2. Add flour cook gently 3 to 4 minutes
  3. Remove from heat
  4. Add milk while stirring
  5. Return to heat and cook until thick stirring occasionally
  6. Stir in sherry
  7. In a small greased casserole layer half the shrimp mushrooms almonds and sauce
  8. Repeat layers
  9. Top with Parmesan and crumbs
  10. Bake at 350 for 30 minutes
