Shrimp And Crabmeat Au Gratin

Ingredients

  • 12 stalk celery finely chopped
  • 1 medium onion chopped
  • 14 c butter
  • 14 c all-purpose flour
  • 1 533 oz can evaporated milk
  • 1 egg yolk
  • 12 tsp salt
  • 18 tsp black pepper
  • 14 lb crabmeat
  • 14 lb shrimp boiled peeled and chopped
  • 3 oz American cheese
  • Italian bread crumbs

Directions

  1. Saute celery and onions in butter until wilted
  2. Blend in flour mixing well
  3. Gradually add milk stirring constantly
  4. Add egg yolk salt and black pepper
  5. Cook over medium heat for 5 minutes
  6. Put crabmeat and shrimp in a mixing bowl pour the cooked sauce over the crab and shrimp and mix well
  7. Transfer half of mixture to lightly-greased 2-quart casserole dish
  8. Top with half the cheese repeat layers
  9. Sprinkle top with bread crumbs Bake at 375 for 10 to 15 minutes or until lightly browned Yield
