Shrimp And Mushroom Ramekins A La Lance

Ingredients

  • 34 lb medium-size shrimp shelled and deveined
  • 14 lb mushrooms sliced
  • 2 Tbsp all-purpose flour
  • 13 c regular strength chicken broth
  • 2 Tbsp dry sherry
  • 12 c shredded Swiss cheese
  • 2 Tbsp chopped green onion
  • 18 tsp Dijon mustard
  • 14 c whipping cream
  • salt and pepper
  • 4 Tbsp butter or margarine

Directions

  1. Melt 2 tablespoons of the butter in a frying pan over medium heat add shrimp and cook stirring often until shrimp turn pink about 5 minutes
  2. Transfer shrimp to 2 individual baking dishes
