Shrimp And Mushroom Ramekins A La Lance
Ingredients
- 34 lb medium-size shrimp shelled and deveined
- 14 lb mushrooms sliced
- 2 Tbsp all-purpose flour
- 13 c regular strength chicken broth
- 2 Tbsp dry sherry
- 12 c shredded Swiss cheese
- 2 Tbsp chopped green onion
- 18 tsp Dijon mustard
- 14 c whipping cream
- salt and pepper
- 4 Tbsp butter or margarine
Directions
- Melt 2 tablespoons of the butter in a frying pan over medium heat add shrimp and cook stirring often until shrimp turn pink about 5 minutes
- Transfer shrimp to 2 individual baking dishes
