Shrimp And Okra Gumbo
Ingredients
- 13 c canola oil
- 2 lb frozen okra chopped or sliced
- 1 c green onions with tops chopped
- 1 c onions chopped
- 8 c cooked rice
- 2 Tbsp Cajun seasoning
- 2 Tbsp Spike seasoning
- 2 qt chicken stock
- 4 large tomatoes chopped
- 1 can stewed tomatoes
- 1 lb smoked sausage cut in small chunks
- 1 to 2 lb small cocktail shrimp
- 1 lb white chicken meat cut in small chunks and browned
Directions
- In a large skillet heat oil and brown okra until tender about 10 minutes
- Add onions and tomatoes to mix
- Cook until onions are translucent
- Put all remaining ingredients in large pot along with mixture in skillet
- Bring to boil then simmer for about 45 minutes
