Shrimp And Rice Salad

Ingredients
- 4 c cooked rice
- 1 c cooked peas
- 1 12 c small shrimp cooked or canned
- 2 Tbsp parsley minced
- 12 c olive oil
- 3 Tbsp lemon juice
- salt and pepper to taste
- 12 c raw mushrooms sliced
- 1 Tbsp tarragon leaves
- lettuce leaves
Directions
- Mix all ingredients except lettuce thoroughly
- Arrange nests of lettuce on 6 plates and fill with mixture
