Shrimp Creole

Ingredients

  • 2 lb shrimp shelled
  • 1 12 c green pepper chopped
  • 1 12 c chopped celery
  • 1 c chopped onion
  • 14 c parsley
  • 4 slices bacon
  • 1 clove garlic chopped
  • 1 Tbsp sugar
  • 12 tsp black pepper
  • 14 tsp red pepper
  • 1 tsp salt
  • 1 bay leaf
  • 28 oz tomato sauce
  • 1 small can tomato paste
  • 4 Tbsp butter or margarine

Directions

  1. Cook shrimp according to directions but reserve 1 cup liquid Fry bacon until crisp
  2. Saute onions peppers celery garlic and parsley in skillet until tender
  3. Do not add bacon at this time drain and reserve until later
  4. Add tomato sauce tomato paste reserved shrimp liquid red pepper black pepper salt sugar and bay leaf to ingredients that are sauteed
  5. Bring to boil
  6. Reduce heat and simmer covered 30 minutes
  7. Add shrimp and bacon crumbled
  8. Bring to a boil simmer 5 minutes
  9. Serve over rice Serves 4 to 5 adults
