Shrimp Creole
Ingredients
- 2 lb shrimp shelled
- 1 12 c green pepper chopped
- 1 12 c chopped celery
- 1 c chopped onion
- 14 c parsley
- 4 slices bacon
- 1 clove garlic chopped
- 1 Tbsp sugar
- 12 tsp black pepper
- 14 tsp red pepper
- 1 tsp salt
- 1 bay leaf
- 28 oz tomato sauce
- 1 small can tomato paste
- 4 Tbsp butter or margarine
Directions
- Cook shrimp according to directions but reserve 1 cup liquid Fry bacon until crisp
- Saute onions peppers celery garlic and parsley in skillet until tender
- Do not add bacon at this time drain and reserve until later
- Add tomato sauce tomato paste reserved shrimp liquid red pepper black pepper salt sugar and bay leaf to ingredients that are sauteed
- Bring to boil
- Reduce heat and simmer covered 30 minutes
- Add shrimp and bacon crumbled
- Bring to a boil simmer 5 minutes
- Serve over rice Serves 4 to 5 adults
