Shrimp Jambalaya
Ingredients
- 1 12 lb peeled and drained shrimp
- 14 c chopped onion
- 14 c chopped green pepper
- 14 c margarine melted
- 1 Tbsp all-purpose flour
- 2 tsp salt
- 18 tsp Worcestershire sauce
- 1 Tbsp vinegar
- 2 c peeled chopped tomatoes
- 1 10 oz pkg frozen okra
- 2 c hot cooked rice
Directions
- Peel and devein shrimp
- Saute onion and green pepper in butter until tender
- Combine flour and dry seasonings blend into onion mixture
- Stir in Worcestershire sauce and vinegar until smooth
- Add tomatoes and okra stirring constantly until thickened
- Add shrimp and simmer uncovered for 15 minutes
- Stir in rice
- Yields 6 servings
