Shrimp Jambalaya

Shrimp Jambalaya

Ingredients

  • 14 c chopped onion
  • 1 c uncooked rice
  • 14 c chopped green pepper
  • 1 tsp chopped garlic
  • 1 tsp chopped celery
  • 2 c water
  • 12 tsp thyme leaves
  • 12 tsp cayenne pepper
  • 1 tsp chopped parsley
  • 6 raw shrimp peeled and deveined

Directions

  1. Spray saucepan with nonstick cooking oil
  2. Place onion over medium heat
  3. Saute onion until clear
  4. Add all ingredients except shrimp
  5. Stir well
  6. Add shrimp cover and cook on very low heat for 35 minutes
  7. Uncover and toss rice
  8. Cover again and cook very slowly until rice is done
  9. Yields 2 servings
