Shrimp Pie
Ingredients
- 1 c cooked shelled shrimp
- salt and pepper
- pinch of tarragon
- 3 large eggs blended with enough milk or cream to make 1 12 c in all
- 3 Tbsp grated Swiss cheese
- 2 Tbsp butter
- 14 c dry white vermouth
- 1 8-inch baked pie shell
Directions
- Saute the shrimp with the butter and seasonings for 1 minute Add the vermouth and boil for 12 minute
- Strew shrimp in pie shell
- Make custard with eggs and milk or cream
- Pour in custard to within 18-inch of rim sprinkle on cheese
- Bake 30 to 35 minutes at 375 or until puffed and browned
