Shrimp Provencale

Ingredients

  • 1 12 lb large shrimp shelled and deveined
  • 1 lb sliced mushrooms
  • 2 garlic cloves minced
  • 3 medium tomatoes diced
  • 2 Tbsp lemon juice
  • salt and pepper
  • 2 Tbsp chopped parsley
  • 3 c hot cooked rice

Directions

  1. About 45 minutes before serving in a 12-inch skillet over medium heat in 2 tablespoons of oil cook shrimp stirring often about 3 minutes until shrimp turn pink set aside
  2. In same skillet add 1 tablespoon of oil
  3. Add mushrooms cook until tender about 3 minutes
  4. Add tomatoes lemon juice salt and pepper
  5. Cook 3 minutes more
  6. Return shrimp to skillet
  7. Heat through
  8. Sprinkle with parsley
  9. Serve with rice
