Shrimp Scampi For Two
Ingredients
- 12 jumbo shrimp shelled deveined and tails intact
- 1 c olive oil
- 3 Tbsp Marsala or dry white wine
- 2 Tbsp minced parsley
- 2 cloves garlic crushed
- 1 tsp salt
- several grindings of fresh pepper
Directions
- Soak fish in buttermilk overnight or for 4 to 6 hours
- Wash well removing buttermilk
- Drain on paper towels
- Squeeze lemon juice over fish
- Roll in mixture of cracker meal flour and small amount of cornmeal if desired
- Fry in heavy skillet cast-iron in enough Crisco plus 1 tablespoon butter to cover bottom of pan well
