Shrimp SoupSopa De Camaron
Ingredients
- 12 lb small fresh or frozen uncooked shrimp
- 4 c chicken broth
- 14 c Casera sauce
- 12 tsp salt
- 18 tsp ground saffron
- dash of pepper
- 1 tsp cornstarch
- 1 Tbsp cold water
- 12 c half and half
- 14 c snipped parsley
Directions
- Peel and devein shrimp chop
- Place shrimp 1 cup of chicken broth and the Casera sauce in blender
- Cover and blend on high speed until smooth
- Heat shrimp mixture the remaining broth salt saffron and pepper to boiling
- Mix cornstarch and water stir into shrimp mixture to thicken
- Heat to boiling cook and stir for 1 minute
- Remove from heat
- Stir in half and half Garnish with parsley
- Yields 5 cups
