Shrimp SoupSopa De Camaron

Ingredients

  • 12 lb small fresh or frozen uncooked shrimp
  • 4 c chicken broth
  • 14 c Casera sauce
  • 12 tsp salt
  • 18 tsp ground saffron
  • dash of pepper
  • 1 tsp cornstarch
  • 1 Tbsp cold water
  • 12 c half and half
  • 14 c snipped parsley

Directions

  1. Peel and devein shrimp chop
  2. Place shrimp 1 cup of chicken broth and the Casera sauce in blender
  3. Cover and blend on high speed until smooth
  4. Heat shrimp mixture the remaining broth salt saffron and pepper to boiling
  5. Mix cornstarch and water stir into shrimp mixture to thicken
  6. Heat to boiling cook and stir for 1 minute
  7. Remove from heat
  8. Stir in half and half Garnish with parsley
  9. Yields 5 cups
