Shrimp With Feta Cheese
Ingredients
- 2 cans 16 oz each stewed tomatoes
- 1 1 lb pkg frozen shelled and deveined shrimp
- 14 lb Feta cheese crumbled
- 4 c cooked brown rice 1 13 c uncooked
- 14 c chopped parsley
Directions
- Simmer tomatoes in a large skillet for 10 to 15 minutes or until tomato liquid is reduced by about half
- Add shrimp simmer just until they begin to turn pink sprinkle with cheese
- Cover skillet simmer about 5 minutes longer or until shrimp are cooked and cheese is hot
- Spoon rice onto a large serving platter top with shrimp mixture
- Sprinkle with parsley
