Sicilian Meat Loaf

Ingredients

• 2 eggs beaten
• 12 c tomato juice
• 12 tsp oregano
• 1 clove garlic minced
• 8 thinly sliced deli ham
• 1 12 c shredded Mozzarella cheese
• 3 slices Mozzarella cheese cut into wedges
• 34 c soft bread crumbs
• 2 Tbsp chopped parsley
• 14 tsp each salt and pepper
• 2 lb ground beef

Directions

1. Combine first 9 ingredients in bowl and mix well
2. Pat into rectangle on waxed paper
3. Layer ham and shredded cheese on ground beef
4. Roll like jelly roll sealing edges and ends
5. Place seam side down in baking dish 13 x 9-inch
6. Bake at 350 for 1 hour and 15 minutes
7. Top with cheese wedges
8. Bake until cheese is melted
9. Serves 8
