Sicilian Meat Roll

Ingredients

  • 2 beaten eggs
  • 34 c soft breadcrumbs
  • 12 c tomato juice
  • 2 Tbsp snipped parsley
  • 12 tsp dried oregano crushed
  • 14 tsp salt
  • 14 tsp pepper
  • 1 small clove garlic minced
  • 2 lb lean ground beef
  • 8 thin slices boiled ham
  • 6 oz 1 12 c shredded Mozzarella
  • 3 slices Mozzarella halved diagonally

Directions

  1. Combine eggs breadcrumbs tomato juice parsley oregano salt pepper and garlic
  2. Stir in ground beef mixing well with hands
  3. On waxed paper pat meat to a 12 x 10-inch rectangle Arrange ham slices on top of meat leaving a small margin around edge
  4. Sprinkle shredded cheese over ham
  5. Starting from short end carefully roll up meat using paper to lift seal edges and ends
  6. Bake in 350 oven for 1 14 hours
  7. Place cheese wedges over top of roll
  8. Return to oven for 5 minutes or until cheese melts
  9. Serve with watermelon pickle or sweet relish
  10. Serves 6 to 8
