Sicilian Rice Balls

Ingredients

  • 1 small jar pignoli pine nuts
  • 2 c rice
  • 34 c olive oil
  • approximately 34 c plain bread crumbs
  • 14 c salami sliced and cut into small pieces
  • 2 cloves garlic cut fine
  • 2 or 3 eggs according to size
  • 12 c grated Italian cheese
  • 3 good-sized onions sliced fine
  • parsley cut small
  • white pepper and salt to taste

Directions

  1. Cook rice to tender
  2. Drain and put aside
  3. Fry onions to light brown
  4. Add salami then bread crumbs to absorb oil
  5. When cool mix all ingredients including eggs pine nuts and cheese etc
  6. Shape into meatball size or smaller
  7. Fill dish with bread crumbs and roll balls to cover
  8. Fry in deep oil or fry in pan to golden brown
  9. Drain
