Silky Meringue
Ingredients
- 3 or 4 egg whites
- sugar 2 to 2 12 Tbsp per egg white
Directions
- Beat with an electric mixer on high speed for 1 minute or until soft peaks form tips curl when beaters are lifted out
- A hand mixer works fine but beating time may be slightly longer
- At soft peak stage add sugar slowly while beating egg whites so that sugar dissolves
- Beat 7 minutes or until stiff peaks form tips stand straight
- Spread the meringue over hot pie filling to avoid leakage between filling and meringue
- Also seal the crust well to prevent leakage and shrinking
- Bake at 350 for 12 to 15 minutes or until golden
