Simon And Garfunkel Chicken
Ingredients
- 4 whole chicken breasts split or 8 breast halves skinned and boned
- salt and pepper to taste
- 1 c margarine
- 8 slices Mozzarella cheese
- 2 Tbsp chopped parsley
- 14 tsp each sage rosemary and thyme
- 12 c flour
- 1 to 2 eggs beaten
- 1 to 1 12 c dry bread crumbs
- 34 c white wine
Directions
- Turn the chicken breasts smooth side down and sprinkle with salt and pepper
- Dot each breast with 1 teaspoon margarine
- Lay a slice of Mozzarella cheese on top of each chicken piece
- Roll up jelly roll fashion long edge to long edge
- Secure well with wooden toothpicks
- Melt the remaining margarine add parsley sage rosemary and thyme
- Roll the chicken rolls in the flour then in egg then in crumbs
- Place in baking dish
- Pour melted margarine and spices over chicken
- Bake at 350 for 30 minutes
