Skillet Beef And Corn
Ingredients
- 12 lb steak thinly sliced
- 1 medium onion chopped
- 12 tsp thyme crushed
- 1 Tbsp olive oil
- 12 c dry red wine
- 1 14 12 oz can stewed tomatoes
- 1 17 oz can whole kernel sweet corn
- 1 c cooked rice
Directions
- In skillet brown meat onion and thyme in oil
- Season with pepper if desired
- Stir in wine bring to boil
- Simmer uncovered over medium heat about 7 minutes or until liquid is gone
- Add tomatoes reduce heat
- Cover and cook 15 minutes or until meat is tender
- Uncover and cook 5 minutes more
- Add corn and rice heat through
- Garnish with sliced green onions if desired
- Makes 4 servings
