Skillet Scramble

Ingredients
- 2 Tbsp butter or margarine
- 2 Tbsp salad oil
- 1 c chopped green pepper
- 12 c chopped onion
- 1 c 4 oz diced cooked ham
- 1 can 8 oz tomatoes drained and chopped
- 6 eggs
- 12 tsp salt
- 18 tsp pepper
Directions
- In large skillet preferably nonstick melt butter or margarine with oil
- Saute pepper and onion over medium-low heat 10 minutes or until very tender
- Stir in ham and tomatoes cook over medium heat until liquid evaporates about 6 to 7 minutes
