Sky High Strawberry Pie

Ingredients

• 3 qt fresh strawberries divided
• 1 12 c sugar
• 6 Tbsp cornstarch
• 23 c water
• red food coloring optional
• 1 10-inch deep dish pastry shell baked
• 1 c heavy cream
• 1 12 Tbsp instant vanilla pudding mix

Directions

1. In a large bowl mash enough berries to equal 3 cups
2. In a saucepan combine the sugar and cornstarch
3. Stir in the mashed berries and water mix well
4. Bring to a boil over medium heat stirring constantly
5. Cook and stir for 2 minutes
6. Remove from the heat add food coloring if desired
7. Pour into a large bowl Chill for 20 minutes stirring occasionally until mixture is just slightly warm
8. Fold in the remaining berries
9. Pile into pie shell
10. Chill for 2 to 3 hours
