2 to 3 tsp chopped fresh herbs such as parsley chives thyme and sage OR 2 to 3 tsp dried herbs of choice
Directions
Peel potatoes if the skin is tough or otherwise just scrub and rinse them Cut potatoes into thin slices but not all the way through
Use a handle of a spoon to prevent knife from cutting all the way through Put potatoes in a baking dish
Sprinkle with herbs Bake potatoes at 425 for about 50 minutes Remove from oven Sprinkle with cheeses Bake potatoes for another 10 to 15 minutes until lightly browned and cheeses are melted and potatoes look soft inside Check for doneness with a fork Serve with any meat fish or poultry dishes or as a main dish with your favorite salad
