Slow-Cooked Pepper Steak

Ingredients

  • 1 12 to 2 lb beef round steak
  • 2 Tbsp cooking oil
  • 14 c soy sauce
  • 1 c chopped onion
  • 1 garlic clove minced
  • 1 tsp sugar
  • 12 tsp salt
  • 14 tsp pepper
  • 14 tsp ground ginger
  • 4 tomatoes cut into eighths or 1 16oz can tomatoes with liquid cut up
  • 2 large green peppers cut into strips
  • 12 c cold water
  • 1 Tbsp cornstarch
  • cooked noodles or rice

Directions

  1. Cut beef into 3 x 1-inch strips brown in oil in a skillet Transfer to a slow cooker
  2. Combine next 7 ingredients pour over beef
  3. Cover and cook on low for 5 to 6 hours or until meat is tender
  4. Add tomatoes and green peppers cook on low for 1 hour longer
  5. Combine water and cornstarch to make a paste
  6. Stir into liquid in slow cooker and cook on high until thickened
  7. Serve over noodles or rice
  8. Yields 6 to 8 servings
