Slow Oven Beef Stew

Ingredients

  • 2 lb beef for stew
  • 2 medium onions cut in eighths
  • 3 stalks celery cut diagonally
  • 4 medium carrots cut in half crosswise and lengthwise
  • 1 c tomato juice or V-8 juice
  • 13 c quick cooking tapioca
  • 1 Tbsp sugar
  • 1 Tbsp salt
  • 14 tsp pepper
  • 12 tsp basil
  • 2 medium potatoes cut in slices 14-inch thick
  • 1 16 oz can green beans

Directions

  1. Combine meat onions celery carrots tomato juice tapioca sugar salt pepper and basil in 2 12-quart casserole
  2. Cover tightly and cook in a slow oven 300 for 2 12 hours
  3. Stir potatoes and green beans undrained into stew and continue cooking covered for 1 hour or until meat and vegetables are done
  4. Stir occasionally
  5. Serves 6 to 8
