Smoked Salmon

Ingredients
- 13 c sugar
- 14 c non-iodized salt
- 2 c soy sauce
- 1 c water
- 12 tsp onion powder
- 12 tsp garlic powder
- 12 tsp pepper
- 12 tsp Tabasco Sauce
- 1 c dry white wine Chardonnay
- Salmon chunks
Directions
- Mix together above ingredients for brine except salmon Brine salmon chunks for 8 or more hours in the refrigerator Rinse chunks after brining and pat dry Air dry 1 to 2 hours to glaze
