Snow Pudding

Ingredients

• 1 medium box vanilla wafers
• 1 large can evaporated milk
• 2 Tbsp lemon juice
• 34 c sugar
• grated rind of 1 lemon

Directions

1. Chill milk until very icy whip until thick
2. Add sugar lemon juice and lemon peel mix
3. Crush vanilla wafers over bottom of 9 12 x 11-inch pan
4. Pour snow pudding over them
5. Top with remaining crumbs
6. Chill until firm
