Snowcapped Broccoli Spears

Ingredients

  • 2 10 oz pkg frozen broccoli spears
  • 2 egg whites
  • 14 tsp salt
  • 13 c mayonnaise or salad dressing
  • 1 Tbsp butter or margarine melted
  • grated Parmesan cheese

Directions

  1. Cook frozen broccoli spears according to package directions drain well
  2. Meanwhile in a small bowl beat egg whites and salt with a rotary beater until stiff peaks form
  3. Gently fold in mayonnaise or salad dressing set aside
  4. Arrange cooked broccoli spears with stem ends toward center on oven-proof platter or 9-inch pie plate
  5. Drizzle the melted butter over broccoli spears Spoon the mayonnaise mixture into the center of the platter over broccoli stems sprinkle with grated Parmesan cheese
  6. Bake in a 350 oven for 12 to 15 minutes or until topping is golden
  7. Makes 6 servings
