Somerset Spread

Ingredients
- 1 lb sharp Cheddar cheese grated
- 12 lb cream cheese room temperature
- 12 c dry sherry
- 14 c finely chopped chives
- 2 Tbsp brandy or cognac
Directions
- Combine all ingredients in large bowl
- Mix with wooden spoon or electric mixer until smooth and spreadable
- Spoon into a crock and cover tightly
- Chill several hours or overnight
- Will keep 2 to 3 weeks
- Makes 4 cups
