Sopaipillas

Ingredients

  • 2 c flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 Tbsp shortening
  • 34 c cold water
  • oil for frying

Directions

  1. Combine dry ingredients in a bowl
  2. Cut in shortening with a pastry blender until mealy
  3. Add water a tablespoon at a time and toss with a fork to blend
  4. Turn onto a lightly floured surface and knead until smooth
  5. Roll out as thin as possible Cut into 2 or 3-inch squares and fry in hot oil 370 until puffed and browned
  6. Makes 20 to 30 depending on size
  7. Serve warm with cinnamon sugar or syrup if desired
