Sopaipillas
Ingredients
- 2 c flour
- 2 tsp baking powder
- 1 tsp salt
- 2 Tbsp shortening
- 34 c cold water
- oil for frying
Directions
- Combine dry ingredients in a bowl
- Cut in shortening with a pastry blender until mealy
- Add water a tablespoon at a time and toss with a fork to blend
- Turn onto a lightly floured surface and knead until smooth
- Roll out as thin as possible Cut into 2 or 3-inch squares and fry in hot oil 370 until puffed and browned
- Makes 20 to 30 depending on size
- Serve warm with cinnamon sugar or syrup if desired
