Soupe A LoignonOnion Soup
Ingredients
- 3 Tbsp butter
- 3 large onions thinly sliced
- 1 Tbsp flour
- 12 tsp salt
- fresh ground pepper
- 3 c beef broth
- 2 c white wine
- 4 thick slices French bread
- 4 Tbsp grated Parmesan cheese
- 4 Tbsp grated Swiss cheese
Directions
- In heavy pot melt butter
- Add onions and cook slowly stirring occasionally until golden
- Sprinkle on the flour and stir for a few minutes seasoning with salt and pepper
- Add broth and wine stirring constantly
- Bring to a boil
- Lower the heat and let the soup simmer for 30 minutes partly covered
