Sour Cream Lemon Pie

Ingredients

  • 1 c sugar
  • 1 Tbsp lemon rind grated
  • 3 egg yolks slightly beaten
  • 14 c oleo
  • 1 baked 9-inch pie shell
  • 3 12 Tbsp cornstarch
  • 12 c fresh lemon juice
  • 1 c milk
  • 1 c cultured sour cream
  • 1 c heavy whipping cream whipped

Directions

  1. Combine the first 6 ingredients in double boiler or heavy saucepan cook over medium heat until thick if not using double boiler use low heat and stir constantly as it burns easily Stir in oleo and cool to room temperature
  2. Stir in sour cream and pour filling into pie shell
  3. Cover with whipped cream and garnish with lemon twists if desired
  4. Store in refrigerator
