Southern Gizzards

Ingredients
- fresh red gizzards can be frozen
- 2 eggs
- 2 c flour
- 2 c pancake mix
- 2 c good oil
Directions
- Heat oil in iron skillet on medium-high heat
- Dip gizzards in whipped eggs and roll in flour or pancake mix
- Put as many as you can get in the skillet
- Turn every 5 minutes for about 20 minutes or dark brown
