Southern Key Lime Pie
Ingredients
- 1 baked 9-inch pastry shell
- 3 eggs
- 1 can 14-oz sweetened condensed milk
- 12 to 34 tsp finely shredded key lime peel or 1 12 tsp finely shredded Persian lime peel
- 13 c lime juice 8 to 10 key limes or 2 to 3 Persian limes
- 12 c water
- 12 tsp vanilla
- 14 tsp cream of tartar
- 13 c sugar
Directions
- Separate egg yolks from whites set whites aside for meringue
- Place the egg yolks in a medium mixing bowl with a fork or whisk beat egg yolks till combined
- Gradually stir in the condensed milk and lime peel
- Add lime juice and water stirring well the mixture will thicken
- Pour into the baked pastry shell
- Bake in a 325 oven for 30 minutes
- Remove from oven and transfer to a wire rack
- Increase oven temperature to 350
