Southwestern Chicken Pot Pie

Ingredients

  • 1 c all-purpose flour
  • 12 c yellow cornmeal
  • 12 tsp salt
  • 12 c 1 stick unsalted butter
  • 14 c cold water

Directions

  1. Prepare cornmeal pastry
  2. Combine flour cornmeal and salt in medium-size bowl
  3. With pastry blender or 2 knives cut in butter until mixture resembles coarse crumbs Sprinkle cold water 1 tablespoon at a time over mixture tossing lightly with fork after each addition until pastry is moist enough to hold together Shape pastry into ball
  4. Cover with plastic wrap and refrigerate until needed
