Southwestern Grilled Cheese Sandwiches

Ingredients
- 8 sourdough bread slices
- 1 tsp to 1 Tbsp finely chopped canned chipotle chilies optional
- 34 lb Monterey Jack cheese thinly sliced
- 14 c canned diced mild green chilies
- 14 c unsalted butter softened
Directions
- Spread 1 side of half the bread slices to taste with chipotles if using
- Arrange half the cheese slices evenly on top of chipotles
- Scatter green chilies on top then add remaining cheese and bread
