Southwestern Lasagna

Ingredients

  • 2 lbs ground turkey
  • 2 Tbsp olive oil
  • 12 cup chopped onion
  • 2 Tbsp chili powder
  • 1 tsp ground cumin
  • 2 cups prepared spaghetti sauce
  • 6 lasagna noodles
  • 34 cup sour cream
  • 1 12 cups shredded Monterrey Jack cheese
  • 1 can 4 oz chopped green chilies

Directions

  1. In a large skillet heat oil over medium to high heat
  2. Add onion and saute until translucent
  3. Add turkey and cook until no longer pink
  4. Drain off any liquid add chili powder and cumin Mix well and add spaghetti sauce
  5. Simmer for 10 to 15 minutes Meanwhile cook lasagna noodles following package directions Drain and reserve
  6. Spread 13 cup meat sauce in the bottom of a deep 4 x 9 inch baking dish
  7. Place 2 noodles on top of sauce overlapping slightly
  8. Spread noodles with half the sour cream then sprinkle with 13 of the cheese Repeat layers once more topping with the chilies
  9. Layer with noodles
  10. Spoon remainder of sauce over noodles and top with cheese
  11. Cover and bake in a preheated 350 degree oven for 25 to 30 minutes
  12. Uncover and bake 10 to 15 minutes longer
  13. Serve hot
  14. Serves 4
