Southwestern Potatoes

Ingredients
- 6 slices bacon
- 2 unpeeled large baking potatoes scrubbed
- 3 Tbsp vegetable oil
- 12 tsp garlic salt
- 18 tsp black pepper
- 14 c barbecue sauce
- 1 c shredded Colby cheese
- 13 c sliced green onions
- 14 c chopped fresh parsley or 4 tsp dried parsley
- 12 c sour cream optional
