Southwestern Shrimp

Ingredients

  • 12 lb large shrimp
  • 14 c finely chopped cilantro
  • 1 finely chopped jalapeno remove seeds for milder dish
  • 2 Tbsp olive oil
  • plain boiled rice
  • 14 c finely chopped green onion
  • 14 c tomato sauce

Directions

  1. Peel and devein shrimp cut in half
  2. Heat oil in nonstick pan over medium-high heat Saute onion cilantro and jalapeno for 5 minutesStir in tomato sauce Add shrimp and stir until shrimp turns pink Serve over white rice Serves 2
