Southwestern Swiss Steak

Ingredients

  • 1 lb boneless round steak tenderized
  • 14 c all-purpose flour
  • 1 tsp salt
  • 1 10 oz can tomatoes and green chilies
  • 14 c chopped celery
  • 14 c chopped carrot
  • 1 Tbsp chopped onion
  • 14 c shredded Cheddar cheese

Directions

  1. Cut meat into 3 or 4 portions Mix flour and salt dredge meat in flour mixture Set aside remaining flour Brown meat in small amount of hot oil about 3 tablespoons Place meat in shallow baking dish Blend reserved flour mixture into drippings in skillet Add tomatoes and green chilies celery carrot and onion Cook stirring constantly until mixture boils Pour over meat Cover and bake in 350 oven for 1 hour or until meat is tender Sprinkle cheese over meat
