Spanish Omelette

Spanish Omelette

Ingredients

  • 3 medium size potatoes
  • 1 medium size onion
  • 2 eggs
  • 1 Tbsp olive oil
  • pepper and salt to taste

Directions

  1. Peel and thinly slice potatoes and onions
  2. Heat oil in a nonstick pan
  3. Add potatoes and cook on medium heat
  4. After a few minutes add the onions
  5. Saute until potatoes are tender and onions are transparent
  6. Add salt and pepper
  7. Beat eggs in a bowl and then add them to the pan
  8. Increase heat slightly
  9. After a few minutes turn omelette over and cook a few minutes longer
