Spanish Potato Omelet

Ingredients

  • 6 small potatoes
  • 3 medium onions
  • 6 to 8 oz smoked ham
  • oil
  • 12 eggs
  • salt and pepper to taste

Directions

  1. Slice potatoes onions and ham with thinnest slicing disk of food processor
  2. If you dont have food processor slice as thinly as possible by hand
  3. Saute potatoes and onions in oil until soft but not brown
  4. Butter an 11 34 x 7 12-inch glass baking dish Layer potatoes onions and ham in dish
  5. Scramble eggs with salt and pepper to taste and pour over all
  6. Bake at 325 for 20 to 25 minutes or until eggs are set
  7. Cut into squares
  8. Serves 6
