Spanish Potatoes

Ingredients

  • 4 to 5 medium potatoes
  • 3 Tbsp chopped onion
  • 3 Tbsp chopped green pepper
  • 4 Tbsp mayonnaise
  • 4 Tbsp cream
  • 2 Tbsp chopped red pimentos
  • 1 tsp salt
  • 14 tsp pepper
  • 12 c grated yellow cheese Colby

Directions

  1. Boil potatoes
  2. Cool and peel
  3. Cut into 12-inch thick round slices
  4. Combine remaining ingredients in a separate bowl
  5. Coat the bottom and sides of a shallow 2-inch baking dish with butter Arrange a layer of sliced potatoes on the bottom and spread with mayonnaise combination
  6. Repeat and top with another layer of spread
  7. Bake in a 375 oven for about 15 minutes or until all cheese topping melts
  8. Cut into squares
  9. Serves 6
