Spanish Rice
Ingredients
- 6 slices bacon diced
- 14 c chopped onion
- 14 c chopped green pepper
- 3 c cooked rice
- 1 1 lb can tomatoes
- 1 12 tsp salt
- 1 large tomato sauce
- 12 tsp pepper
Directions
- Fry bacon in skillet until crisp remove bacon and drain Pour off all but 2 tablespoons of drippings
- Add onion and green pepper to drippings in skillet cook and stir until onions are tender
- Stir in bacon and remaining ingredients
- Bake in 350 oven for 30 to 35 minutes do not cover
- You can also use sausage or frankfurters in place of bacon
