Spanish Rice Casserole
Ingredients
- 1 lb ground beef
- 1 tsp salt
- dash of pepper
- 14 c margarine
- 1 c white rice
- 1 small onion chopped
- 1 medium green pepper chopped
- 1 c water
- 1 16 oz can tomatoes
- 1 4 oz can mushrooms sliced
Directions
- Mix ground beef salt and pepper
- Form into small balls Heat in a large skillet the margarine and meat balls
- Brown slightly
- Remove meat balls
- Add to skillet the rice onion and green pepper
- Cook over medium heat stirring constantly until lightly browned
- Add 1 cup of water tomatoes and mushrooms mix well
- Add meat balls and bring to a boil
- Cover and reduce heat Simmer covered for 30 minutes
