Spatzle

Ingredients

  • 3 13 c unbleached pastry flour
  • 3 large eggs
  • pinch of salt
  • 22 oz milk or water

Directions

  1. Heat a large pot of water to a boil
  2. Put flour in a large bowl
  3. Make a well in flour center and add beaten eggs
  4. Slowly whisk in the liquid carefully avoiding lumps
  5. Press dough through a colander or sieve bottom into the boiling water quickly or shred dough into water off a dish
  6. Dough should be more liquid-like than firm and tricky to control
  7. Boil 5 minutes or until all rise to pot surface
  8. With slotted spoon transfer spatzle to warm serving platter
  9. Top with chicken
  10. Serve with sauce on side
  11. Serve immediately
  12. Serves 4
