Spatzle
Ingredients
- 3 13 c unbleached pastry flour
- 3 large eggs
- pinch of salt
- 22 oz milk or water
Directions
- Heat a large pot of water to a boil
- Put flour in a large bowl
- Make a well in flour center and add beaten eggs
- Slowly whisk in the liquid carefully avoiding lumps
- Press dough through a colander or sieve bottom into the boiling water quickly or shred dough into water off a dish
- Dough should be more liquid-like than firm and tricky to control
- Boil 5 minutes or until all rise to pot surface
- With slotted spoon transfer spatzle to warm serving platter
- Top with chicken
- Serve with sauce on side
- Serve immediately
