Ingredients
- 12 c molasses
- 2 Tbsp honey
- 2 large egg whites
- 14 c plain nonfat yogurt
- 14 c 2 milk
- 12 c wheat bran
- 1 c whole wheat flour
- 1 12 tsp baking powder
- 1 Tbsp ground ginger
- 1 tsp ground cloves
- 14 c chopped walnuts
- 14 c golden raisins
- light vegetable oil cooking spray
Directions
- Preheat oven to 350
- Coat a 12-well muffin tin with cooking spray
- Warm molasses and honey in a small saucepan over low heat just until it begins to steam
- Remove pan from heat and set aside to cool
- Whisk egg whites yogurt and milk together in a large mixing bowl until blended
- Whisk in molasses-honey mixture Using wooden spoon stir in bran flour baking powder and spices Fold in walnuts and raisins
- Turn batter into the prepared muffin tin and bake for 15 to 20 minutes
- Serve warm
- Makes 12 muffins
