Spicy Pineapple-Zucchini Bread

Ingredients

• 3 eggs beaten
• 1 c oil
• 2 c sugar
• 2 tsp vanilla
• 2 c shredded unpeeled zucchini
• 1 8 oz can crushed pineapple drained
• 3 c flour
• 2 tsp baking soda
• 1 tsp salt
• 12 tsp baking powder
• 1 12 tsp cinnamon
• 34 tsp nutmeg
• 1 c raisins optional
• 1 c chopped walnuts

Directions

1. Combine first four ingredients in large mixing bowl
2. Beat until thick
3. Stir in zucchini and pineapple
4. Combine remaining ingredients and mix well
5. Stir this into zucchini mixture until just moistened
